Here is a recipe for Hubeza (or any other leave) with brown rice.

 

Ingredients:
1/2 a cup brown rice (whole grain rice), washed
1 onion, grated
1 carrot, grated
Hubeza leaves, washed
Fresh parsley, chopped
Salt, pepper, paprika (any other flavor you like)

Instructions:
Fry the onion and carrot in olive oil, add rice and stir for a few minutes.

Add 1 cup of water, the spices and the parsley. Bring to the boil and then
simmer until all the liquid has evaporated (whole grain rice takes longer than
white rice)

Leave the rice to cool.

Wash the (hubeza) leaves and remove the stem.


Put 1/2 a teaspoon of the rice at the bottom of the leaf, fold the sides
in a little bit and roll the leaf. Pack them tightly in a saucepan so that the leaves
won't open. Put a lid on the rolled leaves (a smaller lid than the pot)
and pour in some salted water (1 cup water, 1/2 teaspoon salt) - you don't need
much as it will cook in steam. Cover the saucepan and steam for a
few minutes until the leaves are soft.
