Kneidelach recipe:

2 cups water

50 gr margarine

1.5 tblsp. chicken soup powder

Boil in a small pot.

Add 2 cups matzo meal and mix until it absorbs the liquid.

Add 5-6 eggs one at a time and mix well, the mixture has to be very wet (only dry enough to make balls).

 

Boil water with chicken soup powder in a big pot.

 

Get your hands wet and make small balls, throw into the pot and wait until they float and leave for a few minutes. Take out of the water.

Don't throw all the Kneidelach into the pot in one go – they need room to grow…

Serve with chicken soup.

 

 

 

Chicken soup recipe:

Chicken parts – any part you like (I like to put bones, throats, etc)

2 carrots, peeled, chop the ends off

2 courgettes, wash and chop the ends off

2 onions, peeled

Celery root, peeled

Parsley root, peeled

Fresh herbs: parsley, dill, celery – not chopped!

2-3 Bay leaves

 

In a large pot boil the chicken parts in water and clean the foam that floats. Add the vegetables and add more water so that they are covered. Boil again. Add bay leaves and fresh herbs. Boil again. Lower the flame.

Simmer for about 1 hour, when all the vegetables are soft add salt and pepper until it tastes right (be careful not to put too much salt)

You can strain the soup and leave only the liquid or leave it as it is with all the ingredients.

Serve with kneidelach.

*if you like chicken soup powder – add 1-2 tblsp after adding the vegetables.
