Spicy Israeli Carrot Salad
Gil Hovav
We have two popular recipes for carrot salads in Israel: The first is a European salad, with finely shredded carrots, orange juice and sometimes green onions. This is the second one. Its origins are North African and it is much rougher, spicier and filled with sunshine.
Ingredients:
6 big carrots, peeled
2 lemons
1 green hot chili pepper, thinly sliced
Coarse salt
Black pepper
1 cup chopped coriander
3 chopped green onions
5 peeled and chopped garlic cloves
1. Wash and scrub lemons. Squeeze both into a big bowl, and chop one lemon well. Add to bowl.
2. Chop carrots in food processor with the potato chip disk. Add to bowl.
3. Add the rest of the ingredients and mix well.
4. Taste and correct seasoning.
